KETO CHEESY HASHBROWN CASSEROLE 🎉🎉🎉Yes, this recipe is EPIC. We’ve been wanting to create a hashbrown casserole recipe for a while as it was both one of our favorites growing up. The thing that was holding us back was not having a good recipe for the standard cream of chicken soup that get’s mixed into this casserole. ENTER, our Keto Cream of Chicken Soup Keto Cream of Chicken Soup recipe! It’s DELICIOUS and easy and oh so perfect in this casserole.
The topping, which is normally crushed cornflakes in the traditional version, has been Ketofied with crushed pork rinds! The crunch is perfect and I promise you won’t miss the cornflakes, not even a little bit.
And the potatoes? Well, obviously potatoes aren’t Keto friendly so we used our favorite sub, turnips! When testing the recipe we couldn’t decide if we like grated or cubed turnips better in this casserole so we ultimately ended up at a mixture of both. Best of both worlds for sure.

How to make Keto Cheesy Hashbrown Casserole
- Preheat oven to 350° degrees F.
- Combine sour cream, cream of chicken soup, 6 tablespoons of melted butter, salt, pepper and dried onion in a 10” or larger cast iron skillet.
- Add the turnips and shredded cheese to the skillet, stir to combine.
- In a small bowl mix together the crushed pork rinds and the remaining 4 tablespoons of melted butter. Place the pork rind mixture over the top of the turnips.
- Transfer to the oven and bake for 45-55 minutes until the top is golden and the turnips are tender.
Why is it also called Funeral Potatoes?
Hashbrown casserole is a covered dish that is typically served at post funeral luncheons, not a great name for a casserole but now you know.
How to store leftover hashbrown casserole
In a covered dish in the refrigerator for up to 5 days. No, the pork rinds don’t get mushy, promise! To reheat, you can pop the casserole into a warm oven or even just microwave a portion or two.
Can I use a normal baking dish or casserole dish?
Yes, you can! Be sure it’s roughly the same size as our 12″ cast-iron casserole skillet.

- 1.5 cups sour cream
- 10 oz cream of chicken soup recipe here
- 10 tablespoons unsalted butter melted and divided
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon onion powder
- 2 lbs shredded or cubed turnips
- 2 cups shredded sharp cheddar cheese
- 2 cups crushed pork rinds 140g
