Ingredients in Keto Chicken Schnitzel

  • egg
  • pork rind crumbs
  • heavy cream
  • Italian seasoning
  • avocado oil, for frying
  • chicken cutlets, you can also use pork!
  • sauerkraut
  • lemon
  • parsley
  • greens (optional), for serving

How to make Keto Schnitzel

  1. In a shallow bowl beat the egg and heavy cream together. On a medium plate combine the parmesan cheese, pork rind dust, and Italian seasoning.
  2. Heat the oil in a 10-inch or larger skillet over medium-high heat. Dip each cutlet into the egg then dredge it through the cheese mixture. Carefully place the cutlet into the oil and fry it for 3-4 minutes per side until it is golden brown and the internal temperature reaches 165° F.
  3. Serve the schnitzel with the sauerkraut, lemon, parsley, and greens if desired.

How to Tell If You’re Drinking Too Much While Staying Home

Even as states begin making plans to reopen parts of the economy, most Americans are still sheltering at home in an effort to slow the spread of the novel coronavirus. To cope with the stress and uncertainty of this time, people are cleaning and baking and mastering new skills — but they’re also drinking, and while having a glass of wine isn’t unhealthy in and of itself, it’s important to understand why you’re reaching for that bottle.

Spending so much time at home — and in some cases, alone — can cause depression, and it can be tempting to self-medicate with alcohol. There’s also the tendency to think of this as “free time,” even if you’re working from home or distance learning, which can be a slippery slope, Norma E. Ramos-Solla, PhD, a clinical psychologist, told POPSUGAR.

Experts the world over have recommended limiting alcohol consumption during the coronavirus outbreak because of the consequences that can result from overdoing it. “Because alcohol works as a depressant for our central nervous system, what represents a form of ‘fun or to manage leisure’ could increase, precipitate, or develop anxiety, sadness, or health difficulties that affect the immune system,” Dr. Ramos-Solla said.

Drinking more often can also negatively affect the habits and routines that keep you healthy. You might skimp on meals because of the calories you’re drinking, which robs your body of essential nutrients, or find that you’re not able to work out as effectively when you’re hungover. “People also tend to not take their medications when they drink alcohol, and even if they do that, the interaction with alcohol can make those medications less effective for those particular illnesses,” explained José Agosto, MD, a board-certified psychiatrist.

Beyond the health implications, there are concerns about how drinking could impact your productivity and your relationships with your roommates or family. With so many already living in close quarters, “alcohol can make it more difficult to tolerate that situation,” Dr. Agosto said. (Dr. Ramos-Solla noted that alcohol and substance abuse can trigger conflict and violence.)

How Can You Tell If You’re Drinking Too Much?

The federal dietary guidelines define moderate consumption as up to one drink per day for women and two drinks per day for men. That said, if your drinking is hampering your ability to work, causing you to lash out or withdraw from those closest to you, or keeping you from taking care of yourself, you may need to reevaluate. Additionally, “if you start feeling that you’re a failure or that you want to drink and do nothing else, that’s when we start to worry,” Dr. Agosto told POPSUGAR.

In the most severe cases, you can develop a physical dependency, in which your body will start to crave alcohol. Many people who battle addiction experience “alcohol shakes” or tremors. “That’s one of the ways you’ll know your body is dependent. The problem will go away as soon as you have your first beer,” Dr. Agosto said.

If you need to find healthier ways to cope, the experts recommend getting some exercise, practicing meditation, or tapping into your creative side by playing music or crafting. There’s also that long list of tasks you’ve been meaning to check off. “We always have things to do at home that we’re postponing because we’re busy. This is the time to finish the projects you have at home,” Dr. Agosto said. Don’t forget to check in with friends and family, too.

I cannot believe that it has been nearly 3 years since I started Keto in Pearls. I had no idea what I was getting into much less what I was actually doing!

This keto and low carb Mexican lasagna was one of the very first recipes I ever posted to my [then]  little website. As I’ve been going through my old posts and updating the photos and information, I knew this recipe deserved a facelift too.

Even though it’s been buried down in the archives, now is the perfect time to clean it up and make it shine.

This recipe is no exception. Any meal that only requires 1 bowl to prep is a winner in my book. 

If you have leftover chicken in the fridge or need to use your freezer stash (that’s me these days), this Keto Mexican casserole is just the way to use it up!

Ingredients and Substitutions

Don’t have cooked chicken? The store is out of green enchilada sauce? Here’s a list of substitutions so you can still enjoy this recipe:

  • Pre-cooked chicken: if you don’t have cooked chicken on hand, you may use store-bought cooked chicken from the freezer section, rotisserie chicken, or canned chicken. If you have uncooked chicken breasts on hand, simple boil them for 20 minutes in water or broth (or use your instant pot) before preparing the casserole.
  • Green enchilada sauce: red enchilada sauce works just as well but will yield a slightly different flavor. 
  • Low carb tortillas: There are many brands of low carb tortillas available for purchase at grocery stores. Any kind will do but suggest trying to find one with the lowest carb count. I use Mission Low Carb Tortillas at 4 net carbs each for purposes of my recipes. If you are gluten free, replace with homemade keto tortillas (try this recipe from BonAppeteach) thinly sliced zucchini, or even my keto egg noodles.

Ingredients

  • 1.5 lbs chicken breasts, cooked and cooled
  • 2.5 cups shredded cheddar cheese
  • 4 oz chopped green chiles
  • 8 oz cream cheese, softened
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin
  • 10 oz mild green enchilada sauce
  • 6 low carb tortillas (I use Mission brand)

Instructions

    1. Preheat oven to 350 degrees.
    2. Use a mixer to combine cream cheese and spices.
    3. Fold in shredded chicken, green chiles, and 1.5 cups of shredded cheddar cheese.
    4. Pour a little bit of the enchilada sauce on the bottom of a 9×13 baking dish.
    5. Lay 2 tortillas down, overlapping if necessary.
    6. Spread 1/3 cup of the chicken mixture on top of the tortillas.
    7. Add 1/3 cup of the enchilada sauce on top of the chicken.
    8. Repeat layers 2 more times. Use remaining cup of cheddar cheese for top of dish.
    9. Bake for 20 minutes until heated through and cheese is bubbly.

Notes

Use Monterey Jack cheese in place of cheddar for an added kick!

Reduce calories and net carbs by increasing serving size (i.e. 8 slices instead of 6)

To Write Love on Her Arms Founder Talks Mental Health

You’ve probably heard of To Write Love on Her Arms (TWLOHA), a nonprofit dedicated to providing resources and hope for people struggling with depression, self-harm, addiction, suicidal ideation, and more. However, you might not know its origin — it all began with a post on MySpace.

Jamie Tworkowski, the founder of TWLOHA, shared a written piece on his friend Renee Yohe, who was going through a longstanding battle with addiction, depression, and self-harm. She had also in the past attempted suicide. Tworkowski’s words explain how Yohe was turned away from a treatment facility due to the cuts on her arms and, before going back, he and others took her in for five days. They filled those days with music, “too much Starbucks,” and company. It ultimately shows just how valuable a helping hand (or four or five) can be.

Tworkowski’s post sparked a conversation and later a movement online. Soon, he and his friends were receiving messages from people worldwide. TWLOHA became an official nonprofit in 2009, and Tworkowski told POPSUGAR that Yohe, who’s shared her story in her music and in a collection of journals titled Purpose for the Pain, is now a mother to a little boy. Her story was also turned into a feature film.

So far, TWLOHA has donated over $2 million toward treatment and recovery, provided direct scholarships for individuals across the country, and sent funds to 105 counseling practices and mental-health organizations, according to the TWLOHA website. The nonprofit participates in more than 100 events per year as well, Tworkowski said, such as conferences, festivals, and school speaking obligations, and staff members have answered thousands of messages from those struggling around the globe.

In 2018, TWLOHA also compiled a registry of helpline and resource information, Find Help, for a number of different mental illnesses as well as for specific groups like veterans and LGBTQ+ people. “For years we’ve heard from the LGBTQ+ community, we’ve heard from veterans, [and] we obviously know some of the challenges and ways that mental health and stigma affect those communities,” he said. But what it all boils down to is pain.

“I try to always zoom out to the point of, ‘This is ultimately about pain,‘” explained Tworkowski, who lives with depression himself. “And every single person alive can relate to pain and has to figure out what to do with their pain… . We can relate to grief and loss, and ‘How do we cope with those things?'” People often are uncomfortable reaching out for help, Tworkowski noted. Even though he had gotten used to discussing mental health and mental illness with crowds on stage, he hadn’t sought counseling or gone on medication for his own depression. “It was another thing to take those steps and take advantage of those tools in my own life,” he said.

Other barriers that come into play, especially for young people, are judgment from parents or whoever is raising them, as well as insufficient finances, Tworkowski said. This is why, he stated, TWLOHA is devoted to aiding with those funds, so they can, in turn, make healing possible. And though mental illness has been slowly destigmatized over the years by open dialogue around it — celebrities sharing their experiences with mental illness, apps geared toward mental health — Tworkowski pointed out that making an appointment with a mental-health professional, if you can, is that next step.

“We’ve really come to believe in the power of connection and the power of people being with other people,” Tworkowski said of his nonprofit, “not only with mental health professionals, but even just being known and having friends.”

How to Start a Conversation About Mental Health

Learn. “If you want to talk about something, you have to be willing to learn about it,” Tworkowski said. “If you’re concerned that a loved one is dealing with depression or anxiety or addiction, it makes sense that you might do the homework to begin to learn about those issues.” Helpful resources include the National Institute of Mental Health (NIMH), the National Alliance on Mental Illness (NAMI), and the Substance Abuse and Mental Health Services Administration (SAMHSA).

Lean into honesty. If you’re not sure what to say, start with that, but make it known that you want to help. Tworkowski said you could open with, “I don’t know how to word this, but I care about you and I’m concerned.” Even if you’re fumbling through talking about mental illness, the hope is that it gets easier and more normalized.

Share your own vulnerability. Don’t always rely on the other person to open up first. “When I talk about my own struggle with depression, the hope is that it makes it easier for the next person to be honest about what they’re dealing with,” Tworkowski said. “And to me, that’s a lot more disarming than me just saying, ‘Hey, tell me what hurts.'”

“Life can still be good in the midst of pain, in the midst of wishing things were different.”

One of TWLOHA’s visions is to encourage those affected by mental illness to believe their best days are ahead. For people who may not foresee their own best days, Tworkowski noted the important fact that hope, at least in his life, has shown up “as a surprise.” He explained, “I couldn’t predict or orchestrate when good things were going to happen … when I was going to have a crush on someone or get a good opportunity or get a new job, whatever it may be, visit a place that I love, or hear a song that I love.”

Tworkowski continued, “We don’t know when or to what extent or what it’s going to look like for each person, but ultimately there will be things in our futures that make life worth living.” And, despite what you might think, “life can still be good in the midst of pain, in the midst of wishing things were different.”

Don’t fret if you haven’t made the chicken that you need for this chili. It only takes 15 minutes to whip it up in your Instant Pot!

To make in an instant pot: add all ingredients to the pot. Close the lid and seal the vent. Cook on high pressure for 10 minutes. Quick release steam.

To make in a slow cooker: add all ingredients to the bowl. Cook on low for 5 hours or high for 3 hours.
